Ingredients and spices that need to be Take to make Hyderabadi Mutton Khorma:
- 500 gm Mutton Bone-in
- 400 gm Curd
- 3 tbsp Oil
- 2 tsp Salt or to taste
- 2 tsp Red Chilli powder
- 1/2 tsp Turmeric powder
- 1 tsp Garam Masala
- 2-3 Onions thinly sliced
- 2-3 Potatoes cubed
- 3-4 Green Chillies slit
- 1 bunch Coriander Leaves chopped
- 1 small bunch Mint Leaves chopped
- 2 tbsp Charoli Seeds
- 2 tbsp Poppy Seeds
- 1/4 cup Peanuts roasted
- 1/4 cup Dry Coconut pieces roasted
- 12 Almonds soaked
Steps to make to make Hyderabadi Mutton Khorma
- Clean and wash the Mutton pieces and marinate with all the ingredients mentioned including Curd as well. Keep it aside. Meanwhile deep fry sliced Onions just like we do for Biryanis. Spread it onto a plate. Keep that aside in a freezer for 5 minutes. This way it's crisp and crunchy.
- Peel and cut Potatoes into medium sized cubes. Also deep fry these in the same Oil until done. This gives a nice flavour and quickens the cooking process as well. Make a smooth paste of Charoli Seeds, Poppy Seeds, Peanuts and Dry Coconut and Almonds. Keep it aside.
- Pressure cook marinated Mutton Bone-in and blended masala paste with Green Chillies and half of the Coriander and Mint Leaves using about 2 cups of water. Let the pressure settle down before opening the lid of the cooker. Cook on a medium high heat for about 15 minutes and then add fried Potato cubes and crushed Onions. Onions that were kept in the freezer can be easily crushed with hands. It's a useful tip and is very handy too.
- As there was Curd in it, there will be some water. Cook on a high heat for about 15 minutes or until you attain a semi thick consistency. Adjust Salt and garnish with the remaining half of the Coriander and Mint Leaves. If required adjust the consistency with some water if it's too dry. Oil should be seen floating on top. The consistency is usually semi thick. Yum!
- Tip- Coconut powder can also be used for this. You just need to make a paste of it with some water before adding it to the pot. One more amazing option is to use Coconut Milk. Isn't that wonderful? I have already made with that and it was lovely. Enjoy!
