  1. Pressure cook the soaked dal and chopped veggies with salt, turmeric and 3 cups of water for 3-4 whistles. Let the steam release naturally.
  2. Heat 1 tbsp mustard oil. Half fry chopped onion. Mix with boiled tomatoes and sambar masala. Add half a cup of water and allow to boil.
  3. Mix this masala, tamarind paste and jaggery. Allow to cook for 6-7 minutes.
  4. For tempering/tadka heat ghee. Splutter mustard seeds. Add curry leave, red dry chilli and hing. Fry in low flame till aroma comes. Mix this tadka to sambar. Sambar is ready to serve. It's very delicious. *I learnt this simple method of sambar cooking from one of my colleague, when I was posted in Bangalore.
