Ingredients and spices that need to be Take to make Flavor of South India or South Indian Platter:

  1. For Medu Vada
  2. 1 cup urad daal/split black gram
  3. 1-2 green chilli
  4. 1 inch ginger
  5. 2 tbsp chopped curry leaves
  6. 1/4 tsp asafoetida
  7. 1 tsp Salt or to taste
  8. as needed Oil to fry vadas

Steps to make to make Flavor of South India or South Indian Platter

  1. Soak daal for 5-6 hours.
  2. In a grinding jar add soaked daal, ginger and chilli. Blend until it turn smooth paste. While grinding use minimum water, add 1tbsp water at a time. I added total 5tbsp water.
  3. Transfer the batter into a big bowl and whisk in the same direction till it becomes fluffy and light. To check pour some batter in a bowl filled with water, the batter flot on top. Now add salt, asafoetida and curry leaves. Mix all together.
  4. Heat oil in a kadhai. Moist hand with water take some batter, shape it like vada (as shown in pictures). Slowly and carefully pour it into oil.
  5. Fry vadas till become golden brown from both sides. Similarly make all Medu Vada. Serve with hot samber and chutney.
