- Chicken marinade
- 4 chicken breasts
- 3 tbs Plain yoghurt
- 1/2 tbs ginger paste
- 1/2 tbs garlic paste
- 1/4 tsp ground turmeric
- 1 tsp garam masala
- 1 tsp red chilli powder
- 1/2 tsp salt
- To sauté and blend
- 1.5 tbs ghee or oil
- 1 large sliced onion
- 3 Green cardamoms
- 6 cashews
- 4 almonds
- 4 tbs plain yoghurt
- Chicken korma gravy
- 1 tbs ghee or oil
- 1 Bay leaf
- 4 cloves
- 1 cardamon
- 2 inch cassia (cinnamon)
- 2 Green chillies
- 125 ml water (more if needed)
- 1/4 tsp salt
- 3/4 tsp garam masala
- 1.5 tsp coriander powder
- 1/4 tsp chilli powder
- Garnish
- Chopped fresh coriander
Instructions to make to make Chicken Korma
- To a bowl add in your diced chicken
- To the bowl add your marinade, yoghurt, ginger paste, garlic paste, ground turmeric, garam masala, chilli powder and salt
- Mix well and let it marinade for at least 30mins(I prefer overnight)
- To a pan melt in 2tbs of ghee
- Add in 3 lightly bashed cardamon pods and your sliced onion
- Cook until the onion is golden and caramelised
- Remove from heat and add in your cashews and almonds
- Allow to cool completely
- Once cooled blend until a smooth sauce base is formed adding water if necessary
- Using the same pan heat 1tbs of ghee
- Add in your whole spices, bay leaves, cassia, cloves and cardamon
- Add in your chicken and the slit green chillies
- Sauté on medium heat until the smell of raw ginger dissipates(about 5 to 7 mins)
- Add in your onion paste and 125ml of water, mix well
- Add in your salt, garam masala, coriander powder and chilli powder
- Mix well, cover and cook on medium heat until the chicken is tender and cooked through
- Taste and add more salt if needed
- If the korma is too thick add some hot water to loosen the consistency
- Sprinkle some coriander leaves as garnish
- Serve with rice or naan and enjoy
