Steps to make to make Egg and Cauliflower Korma

  1. First, wash and blanch the florets in salted and boiling water for 5 minutes. Add a pinch of turmeric powder to the water too for colour. Then drain and keep covered till use.
  2. Heat 1 tablespoon ghee in a kadhai. Add cumin, when it pops up, add all the whole spices one by one. Saute till aromatic. Make a paste of ginger, garlic and chilli.
  3. Then saute onion, ginger, garlic and chilli paste, and when it turns brown, add tomatoes and cook till soft. Then add tomato puree and cook for 2 minutes.
  4. Cool this mixture and remove whole spices. Grind to a paste. Again heat 1 tablespoon ghee and pop cumin in it. Then add the cauliflower florets.
  5. Saute them along with all the masala powders. Add some water and cook till soft. Then add the boiled and peeled eggs and saute well.
  6. Now add the prepared paste, Coconut milk and mix well. Cook on very low flame for 2 to 3 minutes. Adjust the seasoning and consistency as per taste. Now the korma is ready.
