  1. 2 Tomatoes: Big & Finely Chopped
  2. To Taste Salt
  3. 1 Egg: Whisked
  4. 1/8 Cup Fresh Cilantros or Coriander Leaves: Finely Chopped
  5. 500 gms Water: To Boil the Chopped Tomatoes
  6. 2-3 Garlic Cloves: Roughly Chopped
  7. 1 Onion: Finely Chopped- Optional
  8. 1/8 Cup Fresh Chives: Finely Chopped
  9. 1.5-2 tbsps Cornflour mixed with water
  10. 1/4 Cup Water: RT- To dilute the Cornflour
  11. 2 tbsps Butter
  12. 2 tbsps Sesame Oil: To drizzle on its top- finally

Steps to make to make Chinese: Tomato Egg Drop Soup

  1. Firstly, finely chop up the cilantros or the coriander leaves- set aside, the tomatoes- set aside, the onions & garlic- set it aside and dilute the cornstarch with some water in RT- set it aside too…Keep the Egg well whisked to set aside again
  2. Heat up a saucepan over the medium-high flame and add in the measured 1/2L water to it to bring it to a bubbling boil- Add in the chopped tomatoes into it- Reduce the flame to the medium-low now as it’s getting cooked & the water reduces a bit- Cover the pan at this point- It need be cooked for about 3-5 mins time
  3. Now, once that’s done- Let it cool down a bit then straining it- separate the tomatoes and its stock & blend the cooked tomatoes to a fine purée- Mix it again, with its reserved stock to loosen & thinning its consistency- Set aside
  4. Heat up a frying/saucepan over the medium flame: Add in both the butter & cooking oil- Add into it the chopped onions and garlic & green chillies- Sauté until translucent & the raw smell goes off (don’t brown it at all)- In goes the Tomato Purée mixture (Add in some more water to it, if required) & let it come to a boil
  5. Once it attains a boil- Add in the diluted cornstarch to it & mix almost immediately else it’d tend to get lumpy- Once that’s well mixed & blended, in goes the whisked egg, pour it in with one hand while mixing it simultaneously with the other…Add in a dash of the sesame oil as its taste enhancer- Add in the freshly chopped coriander leaves & the chives- Flame goes off, cover it for just a couple of mins time- Dish out to enjoy
